Ingredients

3 eggs
1 cup honey (or use 1 cup sugar in place of the honey)
1 cup extra virgin olive oil (can substitute with 1 cup melted butter)
2 tsp vanilla
2 cups zucchini, shredded (not peeled)
3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1.5 tsp cinnamon
0.25 tsp nutmeg
0.25 tsp allspice
0.25 tsp cardamom
Optional: up to one cup total of raisins, chopped nuts, or a combination of the 2

Preheat oven to 350 F. Grease 1 large bread loaf pan. Beat eggs, then beat in honey, then oil, then vanilla. Stir in zucchini. Combine dry ingredients. Add to the zucchini mixture and combine until everything is moistened, taking care not to over mix, which would toughen the bread.

Scoop batter into the loaf pan. Bake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan.
