It's hot, hot, hot, and I don't feel like eating anything heavy. However, I do LOVE couscous and tabuleh, so I thought why not fancy up a bit of tabuleh for a cool salad.

Cher's Tabuleh Salad

1 package Tabuleh Salad Mix
water
canola oil
fresh lemon juice
1 slice beef or turkey pastrami, medium thickness (not shaved)
4 roma tomatoes, chopped
1 small zucchini, chopped
6 large olives, chopped (from olive bar NOT packed in brine)

Prepare tabuleh salad as per directions on package adding the pastrami, zucchini, and olives. Stir well to blend all ingredients. Let sit in refrigerator for at least 1 hour before serving over a bed of romaine hearts, roughly chopped.

Yum! Perfect for a hot late summer supper.
