i've been invited last minute, to a dinner next evening and i need a quick, easy, yummy and preferrably inexpensive dessert that i can make with mostly things kept on-hand.
i'd be willing to trade recipes, if that will make you more inclined to share...

suggestions, anyone?

All my desserts are frou-frou and complex ... I have a great one for Clafouti (a French custard with fruit -- requires a flambe).

Here's one that's sooo good:)

Miss Lexie's Pineapple Casserole
20-ounce can pineapple tidbits or chunks, in its own juice
1/2 –cup sugar
3 tablespoons flour
1 cup sharp grated cheese
----
1 stick of butter, melted
˝ cup Ritz cracker crumbs

Drain pineapple, saving 2 tablespoons of juice. Mix the juice, sugar and flour. Add pineapple and cheese. Put in greased casserole. Mix butter and crackers. Put cracker mixture on top of casserole. Bake at 350 degrees F. for 20 to 30 minutes.

Is there anything better than...

Gooey Butter Cake

1/2 cup butter
1 box yellow cake mix
3 eggs
1 - 8 oz. package of cream cheese
1/2 t almond extract
4 cups of confectioners' sugar

Preheat oven to 350. Lightly grease one 9x13 cake pan. Melt butter. Empty cake mix into a large bowl. Stir melted butter, along with one egg, into the cake mix. Press mixture into pan. In a large bowl, mix cream cheese, almond extract, confectioners sugar and the remaining two eggs. Beat for three minutes with an electric mixer set on medium high speed. Spread over top of the cake mixture in the pan. Bake at 350 for 35-45 minutes until golden brown on top. Allow cake to cool. Dust the top with confectioners sugar. (Cake will be gooey on the top, so don't overbake!)

Make sure you don't over cook it! You want it gooey not dry!

i made the ooey gooey butter cake b/c i had all the ingrediants right here in my kitchen. it turned out great! i managed not to overbake (thanks for that advice). it turned out perfect and everyone loved it!

i'm gonna try that pinapple one soon, too. it sounds yummy.

bklynfred, i'm sure your french custard rocks! and if i'm ever in your town, i'd love to try it. but i don't ever get too complex with my desserts. i've got three kids to contend with whilst cooking. wink.gif
