so someone (jessyka?) posted the recipe for buckeyes (aka peanut butter balls) awhile back (and about a half-hour of searching didn't bring it up, damnit) and now i need to have them on hand at home all the time.

i've experimented with the recipe a little too. the first time i made them, i thought, this needs crunch! i was going to put smashed up corn flakes in them, but i forgot to get corn flakes and instead used rice chex. good choice. the little bit of crunch does to the buckeyes just what i think it needed.

this time, i enrobed (like that?) the buckeyes/balls with SPECIAL DARK chocolate chips. sweet.

and i freeze the balls. they're so tasty and yet out of the way, in terms of storage.

I have a recipie for buckeyes from a neighbor that moved here from Vermont. Maybe it's a Vermont buckeyes recipie? She'd given me some and they were great, so she gave me the recipie. I never made them, though, cause one ingredient is parafin, and I just didn't take the time to find out where to buy it.

ANYWAY...I'm working 13 hr shifts for 3 days in a row...but will look it up some time this wk and place the recipie here..

oh, and that recipe uses graham crackers for crunch. smile.gif

sorry steve...i forgot yesterday. sad.gif jane would be proud of my slackerness.

anyway....

chocolate peanut squares
2 cups confectioners' sugar
3/4 cup creamy peanut butter
2/3 cup graham cracker crumbs
1/2 cup butter, melted

topping
2/3 cup semisweet chocolate chips
4 & 1/2 teaspoons creamy peanut butter
1/2 teaspoon butter


line a 9 inch square pan with foil and butter foil -- set aside
in a large bowl, combine sugar, peanut butter, graham cracker crumbs and butter -- mix well and spread into prepared pan

combine topping ingredients in microwave safe bowl -- heat until melted
spread over peanut butter layer
refrigerate until cool
lift out of pan using foil, cut into squares
store in an airtight container in the refrigerator


enjoy this easy alternative to buckeyes. smile.gif

Holiday Buckeyes

1 - 16 ounce package powdered sugar (4 3/4 cups)
1 1/2 cups peanut butter (cramy or nutty)
l/2 cup butter or margarine, softened
1 teaspoon vanilla
1/2 teaspoon salt

1 - 12 ounce package of semisweet chocolate pieces*
2 squares (2 ounces) paraffin*

Thoroughly blend powdered sugar, peanut butter, butter, vanilla, & salt. Shape into l/2 inch balls. Place chocolate pieces * paraffin in top of bouble boiler. Heat over boiling water until melted. (Water in bottom of double boiler should not touch top pan).

Insert wooden pick into candy ball; dip 3/4 of the ball into chocolate. Place on waxed paper until set. Smooth over th oles. Makes 6 dozen candies.

*Wilton Chocolate Candy Melts are a good & easy substitute for semisweet chocoalate and paraphin mixture.

for christmas gifts for my friends this year, i'm doing a buckeye-making party (at their homes). i always get together with 3 of my very very good friends each year, and with this job-quittin' business i did recently, i really shouldn't be buying gifts.

and since i can't get enough buckeyes...
i went to the store and bought a big jar of peanut butter. my mom is donating the other ingredients and i'm heading off to their kitchens for an impromptu kitchen party.

fun, fun! let's just hope that they can dig it...
