My brother and his wife brought over four or five large zuchinis from their garden yesterday. I've never been a fan of zuchini, but I learned this weekend (thanks Keith & Bill!) that I just don't know how to cook it. So, if you have any good zuchini recipes, post 'em here and I'll trying some out.

If you also have eggplant, tomatoes and peppers on hand, ratatouille is very tasty. There are dozens of recipes for it on the web, like this one
here. For the jumbo zucchinis, I like to slice them into half-inch-thick "coins", rub with a crushed garlic clove, brush with olive oil and cook on the grill.

Dilled Zucchini Quiche
1/2 lb. grated zucchini
4 eggs lightly beaten
1-1/2 c. sour cream
1/2 c. grated Swiss cheese
Crumbled bacon
1 (9 inch) pie shell
Salt, ground pepper
Fresh chopped dill (1 tsp.)
Preheat oven to 375 degrees. Place grated zucchini in a colander and sprinkle with light salt. Let stand 1 hour. Add dill and sour cream to eggs, salt and pepper added. Squeeze juice from zucchini by wrapping in cheese cloth. Sprinkle zucchini and bacon crumbs on bottom of pie shell. Add egg and cheese mixture. Bake 40 minutes. Serves 6.

I just slice the mofos into 1.5" slices, fry them in garlic and oil and on the final flip melt a little parm/romano cheese.

Wow, that does look good joyce, thanks. And thanks also Keith & Fred. That grill thing sounds really good Keith. I tried a recipe for low-carb zuchinni hashbrown earlier today and it was yummy.

If you do grill, you can brush with olive oil that's been heated up a bit with fresh herbs and garlic to give it that extra zing!
