Full Version: Spinach chicken casserole?

HA! So it's 'Culturama Day' on St. Kitts...meaning people are partying and no grocery stores or other places of substenance are open....leaving me to fend for myself with barren cabinets and meager meat....so this is what I came up with...and it was MIGHTY tasty...just so you know.

Ingredients:
chicken breasts (2 or so)
a can of spinach (preferably the one that's actually moved houses with you it's been in your cabinet so long
a can of cream of mushroom soup(or other such cream soup)
1.5 c monzarella cheese
1 packet Liptons instant rice meal things (I used chicken and broccoli)..I imagine instant white rice would have a similar effect

Oven 400 degrees
Cook 2 chicken breasts (cubed) on the stove (is there a term for this? :/)
Prepare one packet of Liptons instant rice (cook it, in other words) - (chicken and broccoli or whatever)
Combine chicken and rice with cream of mushroom soup, spinach (drained) and 1 cup shredded monzarella cheese
bake with foil on top for 15 min, then sprinkle rest of monz cheese over the top, cook for 5-10 more minutes.

wow...that sounds good. i wish i was creative in the kitchen. i can cook anything, and do it well, as long as i have a recipe!

ah, well...maybe after i do some more cooking, i'll get more creative.
