Taco Crescent Bake

1 tube (8 oz) refrigerated crescent rolls
2 cups crushed corn chips, divided
1 1/2 lbs ground beef
1 15 oz can tomato sauce
1 envelope taco seasoning
1 cup (8 oz) sour cream
1 cup (4 oz) shredded cheddar cheese

grease a 13 x 9 pan
unroll crescent dough (do not separate) and press into the bottom and up sides of pan
seal seams and perforations
sprinkle with one cups of chips: set aside

brown ground beef and drain
stir in tomato sauce and tace seasoning, bring to a boil
reduce heat and simmer for five minutes
spoon over chips, top with sour cream, cheese and remaining chips
bake, uncovered, at 350 for 25-30 minutes or until crust is lightly browned

serves 8

Sounds great... for a veggie variety, I'd recommend only a half packet of taco spice, though (the soy grounds don't soak up as much; so a half is all you need).

Yum.

You know, there should be a separate thread with all of the joys of easy crescent roll usage. An easy (and cheap) baked brie is had probably every other week at our household with crescent rolls...

I made this yesterday for dinner... yum... we're gonna try it again with tortilla chips instead of frito's (too salty), but it was delightful nonetheless...

Also, I think this is a recipe that can easily be split in half for smaller groups (ie- Margarita & I might be eating this for a while). All you'd have to do is make the rest of the crescent rolls for other use... or just shove them all in your mouth. 4 crescent rolls easily fit in most mouths.

For the dieters...
.......our veggie version was ~ 465 calories, 21.5g fat, 44.1g carbs per serving.
.......a meat version would be roughly ~ 550 calories, 30g fat, 36g carbs per serving.

Not out-of-the-ordinary for an entree. The servings are good sized; so I don't think this would throw a diet if you're overall sensible about what you eat.
