any great soup recipes out there?
i have the soup bug lately. want to try new things.

You have to love (and I mean really LOVE) garlic for this one! I love it!
Dan, not so much, but, then, he often dislikes winey food.
Garlic Soup with Garlic Croutons
Croutons
4-6 slices stale bread cut into bite sized cubes
1 TBS olive oil
Salt and Pepper to taste
3 garlic cloves finely minced
Soup
Peeled whole cloves from one head of garlic
4 cups vegetable stock
1 bay leaf
several pinches of minced fresh thyme
1 egg yolk
3-4 TBS freshly grated cheese (I'm using Romano)
1/2 cup dry white wine
Salt, pepper, and cayenne pepper to tast
Edible flower petals: chives, marigolds, etc.
Preheat oven to 375
Toss bread with olive oil and bake on baking sheet until golden then
turn and bake on second side approx. 30 min total
Toss with salt pepper and minced garlic.
Combine whole garlic cloves in saucepan with stock, bay leaf, and
thyme.
Bring to a boil, then reduce heat and simmer until garlic is very
tender
Beat the egg yolk and stir together with cheese and wine
Whisk this mixture into the pan of hot soup, stirring so as not to
curdle the yolk
Add salt, pepper, and cayenne
Ladle into soup bowls and garnish with croutons and a sprinkling of
flower petals

Wow ... the next time my girlfriend is outta town, I'm TOTALLY making this. Actually, she loves garlic more than I do ... so PERFECTO!

I made it today for lunch and would say....
don't bake the bread as long as I said...It burned:(
also more cheese, more wine, (just cause) and a little less veggie broth (still four cups of water, but not as many cubes) to cut the saltyness
