I am fascinated by all the very different recipes out there for chilli. Here's the one that I use...
HERE'S WHAT YOU'LL NEED
2 tbs olive oil
2 onions,chopped
2 garlc cloves, crushed
2 1/4 lbs lean minced beef
2 glasses red wine
2 x 400g cans chappoed tomatos
3 tbs tomato puree
3-4 tsp dried chilli flakes
1 tsp ground cumin
1 tsp ground coriander
1 stick cinamon
good shake of worcestershire sauce
1 beef stock cube
salt and fresh ground black pepper
2 x 400g red kidney beans
1 large bunch corriander leaves, roughly chopped
wedge o' lime

Heat oil in a dutch oven and fry the onion and garlic until softened. Increase the heat and add the mince, cooking quickly until browned while breaking down any chunks of meat. Pour in red wine and boil for 2-3 minutes.
Have a glass of wine yourself while waiting
Stir in the tinned tomatos, tomato puree, chilli flakes, cumin, ground coriander, cinnamon and worchestershire sauce and crumble in the stock cube. Season well with salt and pepper. Bring to a simmer, coverwith lid and cook over a gentle heat for about 50 minutes - 1 hour, stirring occasionally until mixture is rich and thickened. Add the kidney beans halfway through.
Add fresh corriander and cook 10 more minutes uncovered.
Serve with lime wedges.
This is even better the 2nd day, and can be frozen in baggies.To reheat them, put the bag in boiling water.

oh man! I love chilis, too! This one looks gooooooooood! I'd probably be chastised for using fake meat and veggie broth by somefolk, but I bet it's awesome that way too!

I've been wondering about how to use the fake meat stuff, because, though I'm not veggie, nearly everyone I cook for is. Do you just throw it in the frying pan like regular mince? does it produce a grease? If not, do you have to add oil or something?
Basically, if i wanted to make the above recipe veggie, how would I do it?

fake meat is prepared the same way as regular meat, except without the blood. it's mostly a "heat it up" kinda thing... whichever works best for your recipe... microwave, frying pan, boiling, et cetera.

Greaseless, but there are some oils in it. It's already precooked, so just heat up really. Use it like precooked frozen meat:)

the boca brand is my fav. holds together very well.
also, most good health food stores carry a vegetarian friendly worcestershire sauce.

One of my very favorite meals is homemade Cincinnati-style 3-way chili: A big plate of starchy spaghetti topped with a ton of high-cholesterol ground beef and a big pile of high-fat cheddar cheese. No wonder I'm on the verge of death, lol.
I'll be attempting a soy meat & bean chili myself pretty soon, this recipe looks very promising.
