My fav:

Leaf lettuce or Romaine
Purple cabbage
Baby carrots
Cucumber
Grape Tomatoes
Feta
Sunflower Seeds

Cut it all up into whatever size you prefer. Put it in a bowl. Eat it, yo.

(No, I don't use dressing. It kills the taste of the veggies. I let the feta be the external flavor.)

This is my version of caprese salad (which I made for the first time last night):

Combine the following ingredients in a large bowl:
fresh mozzarella (still packed in water) "boccacino" size is best
grape tomatoes
chopped fresh basil
a few tablespoons olive oil
fresh cracked pepper and a little sea salt

I've seen some recipes that say you can leave the tomatoes whole (because they're small) but I like to cut them -- the tomato juice and the olive oil combine and balance out the flavors.

Here's another one of my favorite salads:

Baby spinach leaves
Field Greens
Fresh Feta Cheese (crumbled)
Dried cranberries
roasted pinenuts

Toss together in large bowl - goes great w/ balsamic vinagrette.

Simple organic greens mix with sliced pears or strawberries and toasted sunflower seeds. And some feta or bleu cheese don't hurt either. Little homemade vinegrette ... NUYCE.

also, a nice cabbage salad with nuts and crumbled raw ramen noodles ... lil oil and vinegar ... yum.

I'm acquiring lots of experience with salad lately. My current favorite: Mixed mesclun greens topped with shredded broccoli and carrots, grape tomatoes, Bermuda onion, chopped mushrooms (sorry Fred) and a few spears of asparagus marinated in raspberry vinaigrette.
