i made this yesterday, and really, really loved it. light and fresh and fruity!

Fresh Ginger Fruit Salad

1 tablespoon minced ginger
Juice of 1 orange
Juice of 1 lime
1 large mango, peeled and diced
1 small pineapple, peeled and diced
2 large Asian pears, peeled and diced
1 pint raspberries

In a large bowl, mix ginger with juices. Toss lightly with fruit and chill for 2 hours.

yes, everyone should make it. i mean this!

i want to point out two important aspects of this salad:

1.) dicing the fruit. i'm used to chunky, big fruit salads. this is more delicate and allows for more flavors to mingle.

2.) when i first read the recipe, i thought asian pear was another name for prickly pear. perhaps i'm the last to know, but they're not the same thing! the asian pear tastes more like a "regular" pear, but it's round and more firm. if you haven't tried a prickly pear, i recommend you eat one on its own. juicy and yummy!
