There's just something about meat loaf. It's such a simple food. One that's good fresh outta the oven and even better a day or two later slapped between a couple of slices of bread and mayo. Anyway, I made a couple of loaves tonight. Here's my recipe:

Meat Loaf

1 lb ground chuck
1 lb ground turkey
2 slices whole wheat bread
2 eggs
salt, pepper and onion powder, to taste

Mix the meats together and add the eggs mixing well. Fresh ground bread crumbs (ground the bread in my coffee grinder which I only use to grind rolled oats) and added the fresh crumbs to the meat and eggs mix. Add salt, pepper and onion powder.

Form the mixture into 2 loaves and put on a well-greased cookie sheet. Top with a thin layer of catsup and bake in a 350 degree oven for 1 hour.

Sounds good! I don't make meatloaf too much anymore, but when I do, here's how I do it....

1 lb lean ground beef or sirloin
1 lb pork sausage
1 egg
stuffing mix(your choice of flavor, I like herbed)
1 big spoonful of flour
fresh herbs/spices of your choice
a few squirts of ketchup

Mix the meats and egg together. Mix in the flour and some stuffing mix(amount up to you, but enough so it all sticks together nicely). Toss in the herbs and spices. Keep mixing. Stick in a few squirts of ketchup. Mix int all thoroughly then press it into a tight ball. Press it down gently into a bread pan. Bake. You can add a layer of ketchup on top if you want.

Great hot or on sammiches with a little mustard.

The sausage in there sounds good
I usually do
1.5 lb of ground chuck
1 packet of Lipton (dry mix) French Onion Soup (usually start with 1/2 the packet and add for consistency)
1 egg
garlic powder
ketchup
mix that all together, then in whaterver you bake it in, make a base about 1 inch thick with part of the meat.
pile on a bunch of mozzarella cheese and then pack on the rest of the meat (make sure there are no holes!)
drizzle a little ketchup over it and bake (350 for an hour I think)
