At the request of Bru-say, a pupu (appetizer) recipe.

Spinach Balls

1 10oz frozen chopped spinach
1 C parmesan cheese
1/2 C melted butter
3 eggs
2 C seasoned stuffing mix
1/4 teaspoon salt

Cook spinach and drain well (my mom says to "squeeze it")
add remaining ingredients
make into balls
freeze till hard
remove balls from freezer, place on cookie sheet
bake balls @ 375 for 20 minutes




Yeah, it made my hour to type "balls" 6x (including that last one), "squeeze" and "hard" in relation to each other and all in under 3 minutes. wink.gif

Actually, this thread name reminded me of a joke I once told my students (!!!) about moth balls!

However, these spinach-ball thingies sound mighty tasty!!!

michelle, are these sausage ball sized balls ? how many balls come from this here spinach balls recipe, i mean... how many balls does one typically roll around in the palms of their hands before running out of ball batter ? 1/4 teaspoon sounds like alot, these must be some salty balls !

so where's the joke, lynne ?

I brought those and bacon-wrapped water chestnuts in BBQ sauce, which is an easy recipe:

5 cans whole water chestnuts, drain and marinade in soy sauce for 6-8 minutes
4 packages microwaveable bacon, pre-cooked
1/2 cup BBQ sauce, 1/2 cup ketchup or chili sauce - mixed

wrap strip of bacon around water chestnut after marinaded, toothpick it up.
bake in 400 degree oven for 15 minutes, then take out, put sauce mix atop, and bake another 10 minutes.

done. yum.

Depends if you want crispy bacon or not. The pre-cooked one is almost there, man...

Dude, best balls that happen to be green in color that I've ever had!

I made them for Xmas Eve and grated fresh romano and parmesean into the mixing bowl instead of using that sad looking excuse of parmy cheese in the green container.

So. Freaking. Tasty.
