Full Version: Coconut Bars!

Okay, here's the deal. Take these things:

1 1/2 cups flour
1/2 cup brown sugar
1/2 cup butter

Combine those things. Blend them well, then press them into the bottom of an ungreased pan. Go ahead and bake that at 350 for 15 minutes while you prepare the rest of the deal.

Take these things:

1 1/2 cups brown sugar
3 eggs

Blend those things until there are no little lumps. Then add these things:

1 tsp. baking powder (NOT SODA)
1 tsp vanilla
1/4 tsp. salt
1 1/2 cups shredded coconut flakes

...and stir those things into the eggs and brown sugar. By now, the other thing should be done baking, so take that out and spread the coconut concoction on top. Put that sucker back in the oven and bake it for another 20-25 minutes. Cool, cut into bars, and enjoy with a friend.

Well, preferably a friend that likes coconut bars, but I guess anyone will do with sufficient bullying.

These coconut bars are SO GOOD! They're just awful rich, so you gotta be careful. You might want to eat them with a lot of friends unless you want a bunch left over.

Yeah... umm... I still have a ton of coconut bars.

wow. i only now read this recipe. man those sound yum. have you ever added chocolate slivers/chips in with the coconut mix part? oh god, just typing that i might salivate.

No--but I have made brownies with coconut flakes in them, and that's kind of similar. Hazelnut-coconut is the best combination I've found so far, so I might try replacing the vanilla extract with some hazelnut flavoring, or something (maybe adding hazelnuts?).

I've only made these once, so I'll have to experiment and see what I can do with them. If you try the chocolate chips, let us know how it turns out.
