I've never eaten any other Broccoli Casserole, but apparently the general population thinks it's boring. I love this recipe that my wife found in a cookbook simply called "For the Southern Santa"

Is is modified to my tastes and experiences, but the basic recipe is in tact.

Broccoli 10oz (I only use fresh approx. 2-3 good size stalks)

1 egg (2 won't hurt)

2/3 cup of cream of mushroom soup (I always use a whole can of my favorite "cream of whatever" soup

1/2 cup of mayonaise

2-3 cups of sharp cheddar grated.

I tbsp of grated onion (I always use a lot more onion)

4 oz of cheese crackers ("Cheeze Its" work best, except they tend to be burnt straight from the box sometimes, so I've found if you get the Sponge Bob Square Pants variety, these are rarely burnt--which is important since your'e baking them again.)

salt and pepper to taste

Preheat oven to 400. Steam broccoli for about 5 minutes. Meanwhile beat the egg, soup, mayo, approx 1-2 cups of cheese, onion and salt and pepper in a separate bowl. Stir in the broccoli and then pout into a buttered casserole dish. Top with the rest of the cheese and crumble the Sponge Bobs on top. Bake for 20 minutes.
Serves 6-8.

If I want to add cauliflower, pototatoes, or chicken or whatever I feel like, I usually make that the "seasoning" ingredient and use it very sparingly. It is afterall, Broccoli Casserole.
