Green Tomato Sauce for Pasta
2.5 pounds green tomatoes, chopped coarse
1 large onion chopped
¼ cup olive oil
1 clove garlic minced
1 bay leaf
½ teaspoon sugar
1 teaspoon salt
1 cup sour cream
Puree the tomatoes
In a saucepan cook the onion in the oil over moderate heat, stirring for
four minutes.
Add the garlic and cook the mixture, stirring for one minute.
Add the tomato puree, bay leaf, sugar, salt and pepper to taste.
Bring the mixture to a boil then simmer, stirring occassionally for about 30
minutes.
Discard the bay leaf, stir in sour cream and serve the sauce over pasta.
