Penne ala Vodka
Olive oil
1 Onion minced
3 cloves garlic minced
½ Can stewed tomatoes (dice them)
1 small can of del Monte tomato sauce
½ cup vodka
½ cup heavy cream
1 fresh tomato, seeded & diced
chopped fresh parsely
Salt and pepper to taste
Cook onion in a little olive oil until clear. Add garlic and saute.
You may also add fresh thick-sliced prosciutto, julienned into 1" pieces.
Add stewed parsely tomatoes and tomato sauce, simmer.
Add vodka and simmer until alcohol evaporates.
Add cream and fresh tomato at the end.
Toss with Penne pasta and garnish with fresh basil.
