I make no guarantees that it falls into anyone's diet, but it's usually a crowd favorite. The almonds are optional.
Nieman Marcus Cheese Spread
Ingredients:
3 oz. slivered almonds
8-10 strips crumbled bacon (or a jar of Hormel real bacon bits)
8 oz. shredded cheddar cheese
6 chopped green onions
1/2 tsp. Worchestershire sauce
1 1/2 c. mayo
Mix all of the above ingredients except for the almonds. Mix almonds in just before serving. Serve with crackers.

Mind if I add one, too? This is the kind my mom used to make when we'd go on various road trips (usu. to Arkansas) when I was a kid. We call it cheese salad, and it's really great on really fresh white bread. Or hard rolls, espec. those mini bite-sized ones.
And no, it's not low-fat.

1 pound American cheese, shredded
8 to 12 ounces of Miracle Whip salad dressing (you can substitute the low-fat kind)
2 jars of diced pimientos, drained
Stir all these ingredients together. Refrigerate for a couple of hours (this gets better the longer it sits). Spread on bread or rolls and serve! A guaranteed party or road trip hit!

actually never tried the low fat yogurt, but it might be worth a shot. a non-fat mayo would probably do the trick as well.
