Since my explanation skills are lacking, a demo was requested (see below quote).

Fig A: flat and not flat sides. Fig B: cut the flatter side first so the turtleback will be bigger.

I like to hold it this same way and eat the cubes right off the skin after pushing it up.

cut away the skin from the top and bottom of the mango; if you cut close to the seed you shouldn't have too much of a mess on your fingers and you can eat the fruit from the top and bottom that didn't get cut off from the sides. you can also hold the under skin part and slice away the fruit so you have squares.

Mich, this is ... genius. I've eaten a lot of mangos in my day, but not like this. Mostly just peeled, cubed, and served in a bowl. This looks like way more fun!

Oh, and as soon as I get dough for airfare, I'm hiring you for my next party.

Exceptionally well done! I love visual aids. I'll likely keep peeling em' and just eatin' em' off the seed. Realizing that this is not always socially expedient but I love gettin my teeth full of mango and my face covered with sticky mango juice and chasing Paula around trying to kiss her.
Oh... when margarita posted her reply here, I realized if I saw something on a drink menu called a "Turtle Back Mango Margarita" , I'd buy.

Man you guys... you're so welcome. Every thanks I read in this thread is really cool cause the turtleback is something I never actively think about. Growing up it wasn't a clean, efficient issue. It was a "Make the turtleback! Make the Turtleback!" issue. It was fun eating. And I had a blast taking the pics and making the handwritten notes, blah blah. I was giggling the whole time - the basis of it was humorous to me so to come back and read some genuine thanks is making my day. And on that note, if penguin Michelle didn't bring up mangos and Stephanie/secretlyjustme didn't suggest a demo, the Orchard would be turtleback-less - Oh the horror!!

my parents have a tree so i can get them free too as long as their tree's going off. i did buy those 2 that night for the "photo shoot", they were $2.50lb. totally ridiculous.

O, the mango juice I've discovered at my local green grocer's (Green Rebel) is fantastic. I say go find some mango juice.

I know this was deep in the pile of old threads but when I stopped internet at home a long time ago I lost the earthlink photo page and all the oh-so professional mango technique pictures (that I had SO much fun taking) were gone, leaving those sad little white boxes w/ a red X in them. I finally opened a photo page thingy and reposted them. So, if you've already seen 'em, cool. If not, enjoy your mango the turtleback way.
