Full Version: Baked Herbed Feta

I guess I have decided on the dishes to take to a house warming I am also taking Drews cake.

10-oz piece of feta Cheese
1TBs chopped fresh rosemary
1TBs chopped fresh oregano
1Tbs chopped fresh thyme
2 Tbs. of olive oil

1. Preheat oven to 350 Put the feta on a piece of foil (12 inches square) Mix together the rosemary, oregano, and thyme, and press on to sides of Feta. Drizzle with the oil and season to taste with cracked black pepper. Gently fold the sides and ends of the foil over to make a parcel.
2. Place on a baking sheet, bake for 15 min, or until feta is soft. Drain off any excess liquid before serving. Serve hot or cold. It is great warm on pita chips

I love feta. I love mixing it with herbs and stuffing large olives with it. Yum!

i have a feta recipe that i just love. it's from deborah madison's vegetarian cooking for everyone. i'll reprint it here, without permission:

8 oz. feta, in 2 chunks
2 T. butter
2 T. olive oil
2 bay leaves
freshly milled pepper
juice of 1 large lemon
2 t. chopped marjoram
1 T. toasted sesame seeds

Slice feta into slabs 3/8 inch thick. Thicker, it won't warm through; thinner, it'll fall apart. Warm the butter and olive oil with the bay leaves in a wide skillet over medium heat until the bay releases its aroma. Add the cheese in a single layer, season with pepper, and heat until it softens and begins to bubble. Turn it over and cook the second side for 1 more minute. Add the lemon juice and let it sizzle for a few seconds, then remove the cheese to a plate. Scrape up any golden, crisp bits of cheese that have stuck to the bottom of the pan and include them too. Sprinkle with the marjoram and sesame seeds and serve.

because i made this last year for the superbowl, and i'm making it again for the big game!

we're planning on a nice spread for the game this year, with the feta (it goes with bread), chips and salsa, and this nutty mixture from march's bon appetit. oh, and i think i'm going to get wings from the bar across the street...

i'm so excited! yummy food! go philly!

anyone else having good food for the superbowl?
